Sunday mornings are the best. On a typical day our neighborhood is bustling with street vendors, cars, and visitors before 10am, but things start a little slower on Sundays, leaving room to sleep in and enjoy the still peacefulness that only downtown residents know.
I awoke a bit early this morning and headed to the market to pick up a few things for brunch before the morning rush. On the menu? Bacon wrapped eggs with potatoes, and gluten free pancakes with the freshest and sweetest of strawberries.
I love a menu that is inspired by seasonal fruits, or market sales. It saves me the worry of figuring out what to make, and decision making is not my strong suit first thing in the morning...my original plan was to toss the berries with a bit of sugar, luckily I took a taste and found that these berries were bursting with a sweet and juicy flavor all on their own.

The recipe for these bacon wrapped eggs can be found via Martha Stewart. I subbed some leftover potatoes for the bread and topped with pepper before baking. A new go to recipe by far and they even make delicious leftovers for a high protein breakfast on the go.
The pancakes are from the Bobs Red Mill Mix - nothing compared to traditional buttermilk pancakes, but will fill the cravings that I often get.
Any recommendations on gluten free pancake mixes?
